Steak And Barley Soup
- 3# 95% lean ground beef
- 4 Tubs Knorr beef stock concentrate
- 3 3/4 T beef base
- 6 Qt water
- 1 1/2 # carrots sliced
- 1/2 bunch celery sliced
- 2 med.white onion chopped
- 2 1/2 T Kitchen Bouquet
- 1/2 tsp black pepper
- 2 C frozen mixed vegetables
- 4 cloves garlic chopped
- 3 14 oz can diced tomatoes
- 2 C barley
- 3 bay leaves
- 1 tsp crushed red pepper
- shredded parmensan
- Combine water, Knorr stock and beef base and bring to a boil.
- Add barley and bring back to a boil. Lower heat and simmer for 20 minutes.
- Add red pepper, garlic and onion and simmer for 20 minutes.
- Add bay leaves, celery and carrots and simmer for 10 minutes
- Add browned beef, tomatoes, Kitchen Bouquet, frozen vegetables and black pepper. Simmer 10 minutes or until frozen vegetables are done.
- Serve and garnish with shredded Parmesan cheese.
