Apple Raisin Cookies
- 2 3/4 c. cake flour
- 1 tsp. salt
- 2 tsp. baking powder
- 1 c. shortening
- 2 c. brown sugar
- 1 c. seeded raisins
- 1 1/2 tsp. vanilla
- 1 egg
- 1/2 c. evaporated milk
- 1/4 c. orange juice
- 2 large apples, pared
- 1 Tbsp. grated orange rind
- Set oven to 375u0b0.
- Sift flour with salt and baking powder. Cream shortening with sifted sugar.
- Add vanilla and egg; beat well.
- Add flour mixture to creamed mixture alternately with the combined evaporated milk and orange juice.
- Mix thoroughly.
- Put apples and raisins through food chopper and add grated orange rind and fold into mixture.
- Drop from 1/2 teaspoon onto well-greased cookie sheet.
- Bake 12 to 15 minutes.
