South Western Style Cole Slaw
- t head of purple cabbage finely julienned
- t limes juiced
- t 1/2 cans tomato paste
- t/4 cups cilantro finely chopped
- t clove of garlic finely chopped
- tmall bunch green onions finely julienned
- t teaspoons salt
- t tablespoon of sugar or honey
- Mix well all ingredients other than cabbage into a large bowl. Mix cabbage into this mixture with your hands.
- Adjust seasoning to taste. (Salt, pepper, sugar)
- Mixture should be liquidy enough to coat cabbage evenly without a lot of excess fluid.
- Cover tightly and let sit in refrigerator at least 2 hours, but preferably overnight.*
- *For best results, let sit 12 to 24 hours so acids break down the cabbage resulting in a softer product.
