Anise Cornmeal Dollar Cakes And Strawberries
- 3/4 cup all purpose flour
- 1/4 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 teaspoon anise seed
- 2 large eggs, separated
- 1 cup milk
- Salad oil
- Strawberries
- Orange wedges
- In a bowl, mix flour cornmeal, baking powder, salt and anise seed. In another bowl, beat to blend egg yolks and mild. Pour liquid into dry ingredients, stir just to evenly moist.
- With an electric mixer, beat egg whites on high speed until soft peaks form. Gently fold whites into batter
- Place a lightly oiled 10-12 inch frying pan or griddle over medium heat. When griddle is hot, pour the batter in 2 tablespoon portions at least 2 inches apart. Spread batter into 3 inch roads. Cook until buddles form, about 2 minutes. Turn and cook other side, about 1 minute.
- Rinse and drain 2 cups of stawberries, hull and slice into a bowl. Sweeted with powdered sugar.
- Accompany pancakes with strawberries and orange wedges
