Anise Cornmeal Dollar Cakes And Strawberries

  1. In a bowl, mix flour cornmeal, baking powder, salt and anise seed. In another bowl, beat to blend egg yolks and mild. Pour liquid into dry ingredients, stir just to evenly moist.
  2. With an electric mixer, beat egg whites on high speed until soft peaks form. Gently fold whites into batter
  3. Place a lightly oiled 10-12 inch frying pan or griddle over medium heat. When griddle is hot, pour the batter in 2 tablespoon portions at least 2 inches apart. Spread batter into 3 inch roads. Cook until buddles form, about 2 minutes. Turn and cook other side, about 1 minute.
  4. Rinse and drain 2 cups of stawberries, hull and slice into a bowl. Sweeted with powdered sugar.
  5. Accompany pancakes with strawberries and orange wedges
