Potatoes, Apples And Caramellized Onions
- 2 cups white potatoes
- 1/2 cup apples, chopped (any variety)
- 1/2 cup onions (any variety)
- 2 tbsp EVOO
- 1 tsp Apple Cider Vinegar
- 1 tsp Rice Vinegar (Can be found in any global foods store)
- 2 Tbsp Butter
- Salt and Pepper
- In a small pan, combine apple cider vinegar, EVOO and Rice Vinegar on low heat. Add potatoes and salt and pepper. Stir with spoon to evenly coat potatoes. Allow to brown on medium heat, then move pan to back of stove, and put it on low heat.
- In separate pan, melt butter. Add onions, and stir occasionally for three minutes on medium heat. Add apples, and stir for two minutes. Allow onions to brown.
- Combine onions, apples, and potatoes in a small bowl, and stir, being careful not to mash the potatoes.
- Add Salt and pepper to taste.
- Garnish with two or three apple slices.
