Autumn Fruit Flan
- BASE
- 1/2 cup butter
- 1/3 cup sugar
- 1 cup all-purpose flour
- FILLING
- 3 pears (preferably barlett or bosc)
- 2 apples
- 4 oz. Cream cheese
- 1/2 cup sugar
- 2 eggs
- 3/4 xup milk
- 1/2 tsp pure vanilla extract
- 1/2 tsp cinnamon
- 1/4 cup sliced almonds
- 1.tor the shortbread base, cream butter and sugar together until light. Beat in flour. Pat into the bottom and up to the slides of a 10" pie dish.
- 2.teel, halve and core pears and apples. Slice. Place in crust, pilling the fruit slightly higher in the centre.
- 3.tream cheese until smooth. Beat in sugar. Add eggs one at a time, beating mixture smooth after each addition. Add milk and vanilla. Pour over fruit. Sprinkle with cinnamon and almonds.
- 4.tlace in a preheated 425o F (210o C) oven and bake 10 minutes. Reduce heat to 350o F (180o C) and bake 35 to 40 minutes longer or until custard is set in the centre. Delicious warm or cold.
