Italian Sausage And Rice Dinner
- One 6 oz. package Farmhouse(R) Chicken Rice
- 1 lb. bulk Italian sausage, casings removed
- 1 cup onion, chopped
- 1 clove garlic, minced
- 1 cup water
- One 16 oz. can peeled whole tomatoes, broken-up
- 1 teaspoon basil leaves
- 2 cups broccoli florets
- 1 cup grated mozzarella cheese
- 2 Tablespoons chopped parsley
- In a large skillet, brown sausage, onion and garlic; drain off fat.
- Add water, tomatoes and basil; bring to a boil.
- Add rice and contents of seasoning packet. Reduce heat; cover and simmer 15 minutes.
- Add broccoli and cook 5-10 minutes longer or until liquid is absorbed.
- Remove from heat. Sprinkle with mozzarella cheese and parsley. Cover and let stand 5 minutes, or until cheese melts.
