Spinach Quiche By Donna Hoiland

  1. Prepare pie crust in pie pan with weights. Bake 8 min at 350 degrees.
  2. In a frying pan fry bacon and cut into small pieces. Then in oil stir fry, chopped onions, red and green peppers, and mushrooms. In a bowl stir together 5 or 6 eggs (beat slightly). Thaw and squeeze out the water from spinach. Pull apart and place in paper towel and squeeze dry.
  3. In a bowl mix beaten eggs, stir fried veg., salt and pepper & bacon. Stir in milk, spinach and cheeses. Pour into pie crust. Top with additional cheese.
  4. Bake in preheated oven 375-400 degrees. Bake until set 45 min. covered with tin foil. Uncover
  5. and bake until browned on top
