Spinach Quiche By Donna Hoiland
- 6 slices bacon, fried and crumbled
- 5-6 eggs, beaten
- 1 (10 oz.) pkg. frozen chopped spinach
- 2 T. olive oil and butter
- 1/4 C. each onions, red, green peppers chopped
- 1/2 C. mushrooms, sliced
- 1/2 tsp. each salt and pepper
- 6-8 oz. shredded cheddar or mixed cheeses
- 1/2 C. milk
- 1 (9 Inch) pie crust shell
- Prepare pie crust in pie pan with weights. Bake 8 min at 350 degrees.
- In a frying pan fry bacon and cut into small pieces. Then in oil stir fry, chopped onions, red and green peppers, and mushrooms. In a bowl stir together 5 or 6 eggs (beat slightly). Thaw and squeeze out the water from spinach. Pull apart and place in paper towel and squeeze dry.
- In a bowl mix beaten eggs, stir fried veg., salt and pepper & bacon. Stir in milk, spinach and cheeses. Pour into pie crust. Top with additional cheese.
- Bake in preheated oven 375-400 degrees. Bake until set 45 min. covered with tin foil. Uncover
- and bake until browned on top
