Potato Latkes
- 10 lbs Russet or regular baking potatoes
- 1/3 the amount of onions that you have of potatoes
- 8 eggs
- Salt and pepper
- Matzoh meal
- Canola or Peanut Oil
- Sour Cream
- Apple Sauce
- Get your Cuisinart and the both the slicing and chopping blades.
- Peel Potatoes
- Using the Cuisinart, rough grate
- Do not drain liquid
- Switch to chopping blade and pulse 2 or 3 times. Do not pulse too much or liquify.
- Add onions.
- Using Matzoh Meal as a binder sprinkle in until mixture becomes lightly binded. Probably close to a couple cups. Do not make too thick.
- Heat up oil in pan.
- Dollop potato mixture into oil to make pancake.
- Cook until pretty brown.
- When cooked, let sit on paper towels for a number of minutes until the oil has been soaked away.
- Serve with Apple Sauce and Sour Cream
