Asian Shrimp Wrapped In Bacon
- 1 lb. uncooked shrimp - peeled & deveined
- 1/2 lb. bacon
- 1 cup fresh snow peas
- 1 8 oz. can sliced water chestnuts
- Marinade:
- 1/4 cup olive oil
- 1/4 cup soy sauce
- 2 tbsp. light brown sugar
- 1 tbsp. lemon juice
- 1 tbsp. Dijon mustard
- 1 tbsp. minced garlic
- Mix all ingredients for marinade & set aside
- Cut bacon slices in half
- Wrap 1 uncooked shrimp, 1 snow pea, and 1 slice of water chestnut in 1/2 slice of bacon and secure with toothpick.
- Continue until all shrimp are assembled & place them in a shallow dish
- Pour marinade over shrimp, cover & refrigerate 6 hours to overnight, turning once if necessary
- Remove shrimp wraps from marinade and place on a foil lined baking sheet
- Bake at 450u0b0 for 8 - 10 minutes, turn & continue baking 3-5 minutes or until bacon is cooked on opposite side
