Panaman Fricassee Of Chicken With Tomatoes, Raisins And Olives

  1. Heat 2 Tbs oil and brown chicken for 10 minutes, remove. 2 Tbs oil + onion and pepper, 5 minutes. Add tomatoes, garlic, 10 minutes. Add chicken, potatoes, bread, wine, stock, rosemary, oregano, cayenne pepper, paprika, salt and pepper. Simmer for 40 minutes. Adjust seasoning, add olives and raisons and simmer 5 minutes more. Serve on rice.
