Organic Thyme And Garlic Chicken With White Sauce
- Marinade:
- 1 full organic boneless skinless chicken breast
- 2 tbsp. fresh organic thyme, finely chopped
- 4 cloves of fresh organic garlic, finely chopped
- olive oil
- white wine(I used Sauvignon Blanc)
- sea salt
- For Sauce:
- 3 tbsp. organic wheat flour
- 1/8 cup cold water
- 2 tbsp. raw salted butter
- 3-4 tbsp. raw sour cream
- 1/4 cup organic milk
- 2 tbsp. fresh organic thyme, finely chopped
- sea salt to taste
- Prep Time: 10 minutes plus marinating overnight.
- Cook Time: 15 minutes to cook chicken, 5 minutes for sauce.
- Marinade:
- Pound chicken until 1/2 inch thick. Stab with fork to create many holes on both sides of chicken-this helps the marinade infuse into the meat quicker.
- Add all garlic, 2 tbsp. thyme. Add enough wine and olive oil to cover meat. Add about 2 tsp. salt. Marinade at least 6 hours, but no longer than 1 day.
- Cooking Chicken:
- Add chicken and all marinade in a medium saucepan. Cook on medium low heat, flipping over every few minutes. When chicken is about half way cooked, cover pan, and continue to cook until done, about 15 minutes.
- Turn off heat, and remove chicken from pan, keeping all drippings and marinade in pan. Set chicken aside to be cubed.
- Sauce:
- Return to pan, turning heat on low. Add flour and water together in separate bowl, and add to pan. Whisk in butter until melted. Whisk in sour cream. Add milk to desired consistency--sauce will thicken upon standing also! Turn off heat. Add remaining 2 tbsp. of thyme, and salt to taste. Drizzle sauce over chicken, or stir chicken and pasta into sauce.
