Grilled Vegetable Skewers
- Peppers - yellow, orange and red
- Zucchinis
- Yellow Squash
- Whole mushrooms
- Pineapple
- New Potatoes
- Red Onion
- Bamboo Skewers
- Barbecue Sauce:
- 3 tablespoons vegetable oil
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon ground cumin
- 1/8 teaspoon ground red pepper
- 3 tablespoons fresh lime juice
- 2 tablespoons water
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons tomato paste
- 1 1/2 teaspoons honey
- 2 cloves garlic, minced
- Salt, to taste
- Can also use cherry tomatoes and eggplant
- Stir sauce ingredients together until smooth
- Chop vegetables into 1.5" squares and put on skewers
- Brush on vegetables before barbecuing
