Spicy Jalapeo-Shrimp Pasta
- 12 oz. fresh or frozen large shrimp (in shells)
- 8 oz. dried linguine
- 1 or 2 fresh jalapeo chili peppers
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 c. chopped tomatoes and/or cherry tomatoes, quartered
- finely shredded Parmesan cheese (optional)
- Thaw shrimp, if frozen. Peel and devein shrimp. Cook linguine according to package directions. Chop jalapeos finely. In a large skillet, heat oil over medium-high heat. Add jalapeos, garlic, salt and pepper; cook and stir for 1 minute. Add shrimp; cook and stir about 3 minutes more or until shrimp turn opaque. Stir in tomatoes; heat through. Drain linguine; toss with shrimp mixture. If you would like, top with Parmesan cheese.
