Red, White & Blue Nachos
- 1 package of tofu, cubed (4 oz)
- 1 (15- to 16-oz) can red pinto beans, rinsed and drained
- 4 oz corn tortilla chips (mix of whole wheat & blue corn)
- 1 cup grated Cheddar cheese (8 oz)
- 1 cup grated Monteray Jack cheese (8 oz)
- 2 oz of Whole Kernel Corn
- 1/4 cup chopped fresh cilantro
- 1 cup sour cream
- 1 1/2 tablespoons fresh lime juice
- 1 large jalepeno, chopped
- 1 bottle Jarritos (your favorite flavor)
- Put warm Jarritos in freezer. Preheat oven to 350u0b0F.
- Arrange 3/4 tortilla chips closely together on ovenproof plate. Combine 1/3 of cheese, beans, corn, cilantro, and chilies in bowl and mix. Spoon vegetable mixture over chips.
- Add remaining chips. Sprinkle remaining cheese over. Put in oven and bake until heated through and cheeses on top is melted, about 10-15 minutes. Remove Jarritos from freezer.
- Serve immediately and enjoy with chilled bottle of Jarritos.
