Cuban Shrimp Fricassee
- 3 cloves garlic - chopped
- 1 onion - sliced
- 1 green pepper - sliced
- 1 bay leaf
- olive oil (enough for sauteing)
- 1 small can of tomato sauce
- 1/2 cup ketchup
- 1 cup white cooking wine
- 1 tsp white vinegar
- 1/2 tsp salt
- 1 tsp Accent spice
- 1 tsp black pepper
- 1 tb tabasco sauce
- 1/2 cup chopped parsley
- 1 small jar pimentos - sliced
- 1 1/2 lbs shrimp, tails on
- 2 cups white rice
- Saute garlic, onions, green pepper & bay leaf
- Add tomato sauce
- On medium heat, add spices, ketchup, cooking wine, and vinegar and tabasco sauce
- Simmer
- Add shrimp - simmer until cooked throughly
- Add pimentos & parsley
- Serve over white rice
