Beer Battered Cod
- 24 oz. Cod cut into 3 oz strips
- 1 12 Oz. bottle of Dark beer (Fat tire, Sierra Nevada, etc.)
- 6 Tbsp. Water
- 2 Tbsp. Baking Powder
- 3 Tbsp. Corn Starch
- 1 Egg
- 1/2 cup Flour
- 1/2 cup Rice Flour
- Salt and Pepper to taste
- In a large heavy pot heat oil to 350-375 degrees for deep frying.
- First whisk egg, beer, water, salt and pepper together in a bowl. In separate bowl whisk together to combine baking powder, flour and corn starch. Add the wet ingredients into the dry ingredients and whisk till smooth. In another container add some flour for dredging. Season both sides of fish before coating with batter.
- First dredge fish in flour and then dip into batter. Carefully drop into hot oil and allow each piece to cook for about 4 minutes. Batter should be golden brown. Allow to cool on absorbent paper (Newspaper works good).
- This batter would also be good with vegetables. (Onion rings, or other veggies used in tempura)
- Idea: Coat as directed above and then put into a bowl of panko bread crumbs before frying for a crispier texture.
