Rum Balls
- 1 1/2 tups Butter
- 3tup Confectionary Sugar
- 1 1/2teaspoons Rum Extract
- 4teaspoons Cold Water
- 2tackages of Semi-Sweet Chocolate Chips
- 1 1/2 tups Chopped Walnuts
- 3 1/2 tups All Purpose Flour
- 1/2teaspoon Salt
- Mixing Directions:
- Pre-heat oven to 325 degrees.
- In a large mixing bowl, work 1 1/2 Cups butter with a wooden spoon until softened.
- Add 1 Cup confectionary sugar, 1 1/2 Teaspoon rum extract, and 4 Teaspoons cold water. Mix with wooden spoon or electric beaters for 2 minutes until smooth consistency.
- Add 2 Packages of semi-sweet chocolate chips and 1 1/2 Cups chopped walnuts. Mix well with wooden spoon
- Add 3 1/2 Cups all purpose flour and 1/2 Teaspoon salt. Mix well with wooden spoon.
- Rolling and Baking Directions:
- Take 1 Tablespoon size scoop of dough and roll into a ball. (Cookie ball should be smaller than a golf ball.) Place cookie ball on an un-greased cookie sheet spacing each cookie ball 1 inch apart from one another. Repeat until cookie sheet is full and ready for baking.
- Bake in oven 20 - 25 Minutes until lightly golden brown.
- Remove from oven and let cookies cool 5 Minutes.
- Cooling and Finishing Directions:
- In a medium mixing bowl, add 2 Cups confectionary sugar.
- Take slightly warm cookie balls and roll in the confectionary sugar until they are lightly coated.
- Place Rum Balls on a plate and serve!
