Rum Balls

  1. Mixing Directions:
  2. Pre-heat oven to 325 degrees.
  3. In a large mixing bowl, work 1 1/2 Cups butter with a wooden spoon until softened.
  4. Add 1 Cup confectionary sugar, 1 1/2 Teaspoon rum extract, and 4 Teaspoons cold water. Mix with wooden spoon or electric beaters for 2 minutes until smooth consistency.
  5. Add 2 Packages of semi-sweet chocolate chips and 1 1/2 Cups chopped walnuts. Mix well with wooden spoon
  6. Add 3 1/2 Cups all purpose flour and 1/2 Teaspoon salt. Mix well with wooden spoon.
  7. Rolling and Baking Directions:
  8. Take 1 Tablespoon size scoop of dough and roll into a ball. (Cookie ball should be smaller than a golf ball.) Place cookie ball on an un-greased cookie sheet spacing each cookie ball 1 inch apart from one another. Repeat until cookie sheet is full and ready for baking.
  9. Bake in oven 20 - 25 Minutes until lightly golden brown.
  10. Remove from oven and let cookies cool 5 Minutes.
  11. Cooling and Finishing Directions:
  12. In a medium mixing bowl, add 2 Cups confectionary sugar.
  13. Take slightly warm cookie balls and roll in the confectionary sugar until they are lightly coated.
  14. Place Rum Balls on a plate and serve!
