Black Bean Salad

  1. In a bowl combine beans, green pepper, carrots and onion. In a screw top jar combine oil, lime peel and juice, cumin and red pepper. Cover, shake well. Pour over vegetables; toss. Cover; chill. stir before serving.
  2. I prefer more carrots and red pepper for color. EVOO is a nice substitute for vegetable oil. Sometmes I add a little coriander and fresh cilantro.
