Black Bean Salad
- 1 15 oz can black beans, drained and rinsed
- 1 Sm Green pepper cut into bite sized strips
- 1 Small carrot coarsely shredded.
- 2 tablespoon chopped red onion
- 2 tablespoons Vegetable oil )prefer olive oil
- 1/4 teaspoon finely shredded lime peel
- 2 tablespoons lime juice
- 1/8 teaspoon ground cumin
- 1/8 teaspoon red pepper (optional)
- lettuce leaves (optional)
- In a bowl combine beans, green pepper, carrots and onion. In a screw top jar combine oil, lime peel and juice, cumin and red pepper. Cover, shake well. Pour over vegetables; toss. Cover; chill. stir before serving.
- I prefer more carrots and red pepper for color. EVOO is a nice substitute for vegetable oil. Sometmes I add a little coriander and fresh cilantro.
