Mojo Salmon Steaks
- 2 tablespoons orange juice
- 2 tablespoons lime juice
- 1/2 teaspoon ground cumin
- 1 clove garlic, very finely minced
- 1/2 teaspoon salt
- 1/8 teaspoon ground cayenne (more or less to taste)
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped mint
- 4 (6-ounce) salmon steaks
- 1. Preheat broiler. Spray baking sheet or broiler pan with cooking spray or line with foil and spray foil.
- 2. Combine orange juice, lime juice, cumin, garlic, salt and cayenne. Set aside 1 tablespoon of mixture and combine it with the chopped cilantro and mint.
- 3. Place the fish on the prepared baking sheet and drizzle half of the remaining juice mixture over the fish. Broil 4 minutes. Turn the fish over and drizzle with the remaining half of the juice mixture. Broil another 4 minutes, or until cooked through.
- 4. Spoon reserved herb mixture over the steaks and serve immediately. Makes 4 servings.

- Swordfish, salmon or tuna steaks may be used in any of these recipes as long as you adjust cooking times.
