Stuffed Shells
- 1 lb. large shells
- 1 (10 oz.) pkg. frozen spinach, thawed and water squeezed out
- 1/2 lb. Italian sausage
- 1/2 lb. cottage cheese (small curd), drained
- 3 garlic cloves, crushed
- juice of 1/2 lemon
- 1/4 c. grated cheese
- salt and pepper to taste
- 1/2 tsp. oregano
- 1 egg, beaten
- 2 c. tomato sauce
- 2 c. coarsely grated Swiss or Mozzarella cheese
- Boil pasta until
- firm,
- rinsetnd
- drain.
- Saute
- the sausage and break up
- into small pieces.
- Mix with the drained spinach, drained cottage
- cheese,
- garlic, lemon juice, grated cheese, salt, pepper and
- oregano.ttir in beaten egg.
- Stuff the shells with this mix
- and
- place in a greased baking dish. Top with tomato sauce.take at
- 350u0b0 until all is hot and the cheese melted, about 20 minutes.
