Best Ever Meatloaf
- Cooking spray
- 2 lbs ground beef
- 2 eggs
- 1 cup milk
- 1 cup dry bread crumbs
- 1/4 cup minced shallots
- 1/3 cup plus 1/4 cup ketchup
- 1 tablespoon Colman's dry mustard
- 1 tablespoon prepared horseradish
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh ground black pepper (or to taste)
- (NB: This recipe does not need salt!)
- Coat bottom of small saute pan with cooking spray. Saute shallots on medium heat until soft and translucent. Mix shallots well with all other ingredients in large bowl. Transfer into large loaf pan that has been coated with cooking spray. Spread top of mixture with remaining 1/4 cup ketchup and bake at 350u0b0 for 55 min. to an hour.
