Cherry Cake
- 3/4 c. shortening (you can use part butter)
- 1 1/4 c. sugar
- 3 eggs
- 2 3/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 c. milk
- 1/2 c. cherry juice
- 1 qt. sweet cherries (canned)
- 1/2 c. chopped walnuts
- Cream together sugar and shortening.
- Add eggs and beat thoroughly.
- Add 1 cup of the flour, salt, soda, baking powder and spices and mix thoroughly.
- Add and mix remaining 1 3/4 cups flour, milk and cherry juice.
- Fold in drained pitted cherries and the nuts.
- Grease and flour a 9 x 13-inch pan.
- Bake at 350u0b0 for 1 hour.
- After removing cake from oven, let it stand on cake rack about 5 minutes, then remove from pan.
- Let cake cool on cake rack. Serve while it is still a little bit warm with whipped cream or ice cream.
