Pom Quinoa
- 1 cup arils from 1-2 POM Wonderful Pomegranates
- 2 cups cooked quinoa
- 1 cup cucumber, diced small
- 1/2 cup chopped green onion
- 1/2 cup green pepper, diced small
- 3/4 cup minced parsley
- 1/2 cup minced cilantro
- 1/4 cup minced mint leaves
- 3/4 cup sliced almonds
- 1/4 cup lemon juice
- 1/4 cup olive oil
- salt and pepper to taste
- 1. Score 1-2 fresh pomegranates and place in a bowl of water. Break open the pomegranates underwater to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve 1 cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.)
- 2. Cook quinoa according to package directions. Finely dice cucumber, onions and green pepper; mince herbs.
- 3. Mix all ingredients except lemon juice and olive oil together to make tabouli.
- 4. In a small bowl, whisk lemon juice, olive oil, salt and pepper.
- 5. Pour over tabouli and serve immediately.
