Caramel Sandwich Cookies
- 1 c. margarine
- 1 c. sugar
- 1 (3 oz.) pkg. cream cheese, softened
- 1 egg, separated
- 1 tsp. almond extract
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
- 2 c. unsifted flour
- colored sugars
- 1 (14 oz.) can Eagle Brand sweetened condensed milk
- 1/2 c. whipping cream (unwhipped)
- In mixer bowl, beat margarine, sugar, cheese, egg yolk, 1/2 teaspoon almond extract, vanilla and salt until well blended.
- Add flour; mix well.
- Chill 2 hours on floured surface; knead dough to form a smooth ball.
- Divide into thirds on floured surface; roll out each portion to 1/8-inch thickness.
- Cut into desired shapes. Place on cookie sheets and brush with slightly beaten egg white and sprinkle with colored sugars.
- Bake in 375u0b0 oven for 7 to 10 minutes.
- Cool.
