Blackened Fish
- 1 Teaspoon Paprika
- 1 Teaspoon Salt
- 1 Teaspoon Ground Thyme
- 1/2 Teaspoon Ground white pepper
- 1/2 Teaspoon Ground Oregano
- 1/2 Teaspoon Garlic powder
- 1/2 Teaspoon ground Majoram
- 1/2 Teaspoon ground Cayene pepper
- Margarine (melted)
- Vegatable oil
- Lightly coat cast iron skillet with vegatable oil (no more than a teaspoon.
- Mix together the seasonings in a bowl. Dip fish fillets in melted margarine (or butter), coat on both sides. Then sprinkle seasonings on fillets or dip fillets in seasonings, coat on both sides. I prefer to just sprinkle the seasonings on the fillets w/o the margerine. I actually melt the margarine in a cast iron skillet RIGHT before cooking the fish.
- Heat the skillet until the oil starts smoking, please about a tablespoon of margarine in the skillet, once the margarine melts immediately place the fillets in the skillet. (BEWARE) This recipe creates quite a bit of smoke. Cook fillets approx two mins on each side. Fillets go well served over white rice and a brocolli, cauliflower, carrot medley
