Tortilla Soup

  1. Dissolve bouillon cubes in boiling water in large soup pot. Stir in chicken and cumin.
  2. Simmer over low heat 2 hours.
  3. Heat oil in saucepan.
  4. Add green pepper, onion and garlic.
  5. Saute until tender.
  6. Stir into soup pot.
  7. Add consomm, tomatoes, tomato sauce and green chilies.
  8. Mix well.
  9. Blend cornstarch with 1 tablespoon soup liquid.
  10. Stir into soup.
  11. Simmer 1 to 2 hours or until heated through, stirring occasionally.
  12. Add salt and pepper.
  13. In individual serving bowl, top with tortilla chips, shredded Monterey Jack cheese, chopped onion or chopped avocado if you like.
