Pumpkin Chocolate Chip Oatmeal Bars
- 2.5 cups old-fashioned rolled oats
- 1/4 cupflour
- 1/4 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground cloves
- 1 tsp vanilla extract
- 3/4 cup pure pumpkin
- 1/2 cup applesauce/almond milk
- 1 large egg
- 1/4 cup honey/agave
- 1/2 cup mini chocolate chips
- Preheat oven to 350F degrees. Spray 8 x 8 pan with cooking spray.
- Mix together oats, flour, brown sugar, baking powder, salt, cinnamon, and pumpkin pie spice. Add in the vanilla, pumpkin, milk/applesauce, egg, and honey/agave. Mix together until evenly combined. Stir in mini chocolate chips.
- Pour the mixture into the pan and bake for 20 minutes. Allow to cool and cut into bars. Bars stay fresh for up to one week in a covered container at room temperature or in the refrigerator.
