Pumpkin Chocolate Chip Oatmeal Bars

  1. Preheat oven to 350F degrees. Spray 8 x 8 pan with cooking spray.
  2. Mix together oats, flour, brown sugar, baking powder, salt, cinnamon, and pumpkin pie spice. Add in the vanilla, pumpkin, milk/applesauce, egg, and honey/agave. Mix together until evenly combined. Stir in mini chocolate chips.
  3. Pour the mixture into the pan and bake for 20 minutes. Allow to cool and cut into bars. Bars stay fresh for up to one week in a covered container at room temperature or in the refrigerator.
