Grilled Tuna Pasta Salad
- 2 medium tuna steaks
- 1/2 cup olive oil
- 6 tbsp. soy sauce
- 1/2 cup Sherry
- 2 tsp. dill relish
- freshly grated ginger
- 1 tsp. grated orange peel
- 1 lb. elbow macaroni
- 1 cucumber, chopped
- 1 small onion, chopped
- freshly ground pepper
- 1 cup mayonnaise
- Place the tuna into a medium bowl. In a small bowl mix the olive oil, 4 tbsp. of soy sauce, Sherry, dill relish, ginger and orange peel and pour over the tuna. Let marinate overnight.
- The next day, cook macaroni according to the package directions. Drain and cool. Grill the tuna over a medium fire for five minutes per side, or until cooked through. Place the macaroni into a large bowl; add the tuna, the remaining soy sauce, cucumber, onion, ground pepper and mayonnaise. Mix and, if necessary, add more mayo. Refrigerate. Serve with Basil Tomatoes.
