Baked Petisa Tilapia
- 3 finely grated carrots
- 3 finely chopped celery stalks
- 2 red, ripe tomatoes
- 2 tablespoons finely chopped red onion
- 1/2 clove of garlic, minced
- 1/2 tablespoon of oregano
- 1/2 tablespoons of salt and pepper
- quesillo or queso fresco
- 2 dashes of tiger sauce
- 1 tablespoon extra virgin olive oil
- 2 skin -off fresh tilapia fillets
- First, rub the fillets with salt pepper and minced garlic and then drizzle them in olive oil. leave marinating for 15minutes.
- Then, spary a glass pyrex lightly with cooking spray and layer it with the chopped onions, grated carrots, and chopped celery, in that order. Place the tilapia fillets on the bed of vegetables and sprinkle with oregano and tiger sauce.
- then place slices of tomatoes on top of the fillets and sprinkle the quesillo on top. Cover with aluminu foil and bake in a preheated oven at 350 degrees for about 25 minutes or until the fish flakes off. Cooking time will depend on the thickness of the fillets.
