Mushy Coco Nana Muffins
- 2.5 mashed bananas
- quarter cup flax seeds
- 1.5 tablespoons water
- 1 1/4 Cup sugar (half granulated and half brown)
- 2 Cups flour (half all purpose half whole wheat)
- 3 tablespoons cacao powder
- 2 tablespoons cinnamon
- 1-teaspoon salt
- 1 teaspoon baking soda
- 2 tablespoons vanilla
- 1-cup unsweetened organic applesauce
- 1 egg
- 1 Small cube of butter
- Preheat oven 350u0b0F. Mash up bananas and set aside. In large bowl, cream butter and sugar and add a little water to help mix. In medium bowl, combine flour,cacao, baking soda, and salt and cinnamon; set aside. Add egg, vanilla and banana; mix well. Add flour mixture slowly alternating with applesauce and mix in flax seeds; blend thoroughly but do not over mix. Pour into prepared pans. Bake 17-20 minutes or until toothpick inserted comes out clean. Cool 10 minutes in pan on rack; remove and cool completely before decorating.
