Drunk With Love Cake
- Cake:
- 1 c stout
- 1 c unsalted butter
- 3/4 unsweetened cocoa powder
- 2 c all-purpose flour
- 2 c sugar
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- 2 large eggs
- 2/3 c sour cream
- Ganache:
- 11 oz semisweet cocoa chips
- 12 tbsp heavy cream
- 1 1/2 tsp instant coffee
- granules
- Sliced almonds for decoration
- Cake:
- Preheat oven to 350F. This will make a bunt cake or three 5 inch heart layers. Butter & flour your pans. Bring stout & butter to simmer in large heavy saucepan over medium heat. Whisk in cocoa powder until mixture is smooth. Cool Slightly. Whisk the rest of the dry ingredients together. Beat the eggs & sour cream together in a large bowl. Add the stout-flour mixture & beat briefly on slow speed. Using a rubber spatula, fold batter until completely combined. Pour it into prepared pans. Bake cake until a tester inserted into the center comes out clean, about 35 min. Transfer cake to rack; cool completely in the pan before turning out.
- Ganache:
- Half the ingredients for a single layer. Melt the chocolate, heavy cream, & coffee in the top of a double boiler over simmering water, stirring until smooth & warm. Pour to just cover the top of cooled cake. Arrange almonds into hearts. For a heart cake, chill remaining ganache, stirring several times. When cool, fill layers.
