Fresh Strawberry Pie
- 1 qt. fresh strawberries
- 3 oz. cream cheese
- 1 Tbsp. coffee creamer
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1 baked pie shell
- Pick and wash berries and put aside on paper towels to dry. Cream together the cheese and coffee creamer and spread evenly in bottom of baked pie shell.
- Place the biggest, nicest berries, points up, in the shell (this will take about half the berries). Put in refrigerator to chill while preparing the glaze.
- Crush remaining berries and add water to make 1 1/2 cups berries and juice.
- Add sugar blended with cornstarch and cook over low heat until thick, stirring constantly.
- Add enough red food coloring to give deep color and cook 2 minutes longer.
- Cool.
- Pour over berries in crust and chill until ready to serve.
- Serve with whipped cream.
