Smoked Chicken Pasta
- 2 cups of chicken breasts cut into small chunks
- 1 cup purple onion diced
- 1/2 cup sun-dried julienne cut or diced tomatoes packed in oil and herbs
- 2 cups of half and half
- 1 stick of unsalted butter
- 1 lb of penne pasta
- 1 1/2 grated smoked gouda cheese
- salt and pepper to taste
- 1. Saute the chicken, sundried tomatoes packed in oil, and onion in a nonstick skillet over medium heat until chicken is done. Cover with lid while cooking.
- 2. In the meantime, melt the butter in a 2 quart pot over medium heat. Add the 2 cups of half and half and cook over medium heat until it slightly thickens.
- 3. Add 1 cup of the grated smoked gouda cheese to the half and half-butter sauce. Stir until melted.
- 4. Then drain off any excess oil from the cooked chicken,onions, and sun-dried tomatoes and add them to the sauce. Stir well.
- 5. Add all of the above to the 1 lb of penne pasta cooked according to the package instructions.
- 6. Garnish with the remaining 1/2 cup grated smoked gouda cheese.
- 7. Let the pasta rest for 5 to 10 minutes before serving.
