Sweet Potato Gratin With Goat Cheee
- 3lbs Sweet potato or yams
- 2lbs Idaho potato
- 1/2 qt heavy whipping cream
- a sprig of thyme
- Goat cheese (crumbled)
- salt and pepper to taste
- Parmesan to top
- Pre- heat oven to 300 degrees
- 1. Peel sweet and Idaho potatoes and cut horizontally a 4th of an inch using a knife of a mandolin.
- 2.In a bowl combine cream and thyme leaves
- 3. Layer Idaho potato on a casserole dish followed by a layer of sweet potato. Pour cream and thyme mixture to cover one layer then sprinkle crumbled goat cheese on top. Layer the rest of the potatoes following the same procedure.
- 4. Sprinkle some Parmesan cheese and goat cheese if desired on top of the final layer. Make sure that there's enough cream to cover the rest of the potatoes.
- 5. Wrap in Foil and Bake in oven until potatoes are tender. Brown the top using a broiler if desired for crunchiness.
