Sweet Potato Gratin With Goat Cheee

  1. Pre- heat oven to 300 degrees
  2. 1. Peel sweet and Idaho potatoes and cut horizontally a 4th of an inch using a knife of a mandolin.
  3. 2.In a bowl combine cream and thyme leaves
  4. 3. Layer Idaho potato on a casserole dish followed by a layer of sweet potato. Pour cream and thyme mixture to cover one layer then sprinkle crumbled goat cheese on top. Layer the rest of the potatoes following the same procedure.
  5. 4. Sprinkle some Parmesan cheese and goat cheese if desired on top of the final layer. Make sure that there's enough cream to cover the rest of the potatoes.
  6. 5. Wrap in Foil and Bake in oven until potatoes are tender. Brown the top using a broiler if desired for crunchiness.
