Caponata(Serves 12 To 15)
- 1 stalk celery, coarsely chopped
- 3 green peppers, chopped
- sufficient olive oil to prevent sticking
- 3 medium eggplants, cut into 3/4-inch cubes (unpeeled)
- 2 medium onions, chopped
- 1 lb. mushrooms, chopped
- 1/2 c. wine vinegar
- 1 tsp. crushed red pepper
- 2 Tbsp. sugar
- salt to taste
- 1 (28 oz.) can tomatoes, drained and chopped
- 1/2 c. green olives, chopped
- 1/2 c. black olives, chopped
- 1 lb. softened butter
- 1 lb. powdered sugar
- 1 lb. brown sugar
- 1 qt. good vanilla ice cream, softened
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 large spoonful batter
- 1 generous jigger rum
- boiling water
- Put into mug and stir well.
- Sip and enjoy.
