Mocha Truffle Cookies
- 1/2 cup butter
- 1/2 cup semi-sweet chocolate pieces
- 1 tablespoon instant coffee crystals
- 3/4 cup sugar
- 3/4 cup brown sugar (packed)
- 2 eggs
- 2 teaspoons vanilla
- 2 cups all purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate pieces
- -In a large sauce pan, melt butter and 1/2 cup semi-sweet chocolate pieces over low heat. Remove from heat. Stir in coffee crystals and cool 5 minutes.
- -In a medium mixing bowl, combine flour, cocoa powder, baking powder, and salt. Stir in the coffee mixture. Stir in 1 cup semi-sweet chocolate pieces.
- -Drop dough by rounded tablespoon onto lightly greased cookie sheets or parchment paper.
- -Bake 350' for 10 minutes. Let cool 1 minute before removing from sheet.
