Chilled Raspberry Parfaits

  1. In a blender, combine 2 cups berries and nectar.
  2. Cover and process smooth.
  3. Sieve to remove seeds.
  4. Combine about 1/3 cup puree in saucepan with gelatin; let stand 5 minutes, then heat and stir until gelatin is dissolved.
  5. Remove from heat; stir in lemon juice, Equal and remaining puree.
  6. Place in a large mixer bowl. In chilled small mixing bowl, beat evaporated milk until soft peaks form and mixture triples in volume.
  7. Gradually fold in gelatin mixture.
  8. Gently fold mixture into the 1 cup whole berries.
  9. Turn into parfait glasses over a layer of raspberries. Makes 6 servings.
  10. Cover and chill 4 to 8 hours.
