Chilled Raspberry Parfaits
- 2 c. fresh or frozen raspberries, thawed
- 1/2 c. peach or apricot nectar
- 1 envelope unflavored gelatin
- 1 tsp. lemon juice
- 4 packets Equal
- 15 oz. can evaporated milk, chilled icy cold
- 1 c. fresh or frozen raspberries (optional)
- In a blender, combine 2 cups berries and nectar.
- Cover and process smooth.
- Sieve to remove seeds.
- Combine about 1/3 cup puree in saucepan with gelatin; let stand 5 minutes, then heat and stir until gelatin is dissolved.
- Remove from heat; stir in lemon juice, Equal and remaining puree.
- Place in a large mixer bowl. In chilled small mixing bowl, beat evaporated milk until soft peaks form and mixture triples in volume.
- Gradually fold in gelatin mixture.
- Gently fold mixture into the 1 cup whole berries.
- Turn into parfait glasses over a layer of raspberries. Makes 6 servings.
- Cover and chill 4 to 8 hours.
