Brie En Croute With Apricot
- 2 sheets puff pastry (can be purchased ready-made at most supermarkets)
- 2 wedges Brie cheese
- 3/4 cup apricot preserves
- 1/2 cup pecans - chopped and toasted
- 2 T butter - melted
- Pre-heat oven to 350 degrees. Toast the pecans in the oven. continue to keep the oven heated at 350 degrees once the pecans are removed.
- Place one sheet of puff pastry on an ungreased baking sheet.
- Place the 2 wedges of Brie on the puff pastry so that they resemble a rectangle. Cover with apricot preserves. Sprinkle the toasted pecans on top.
- Place the other sheet of puff pastry over the brie and first sheet of puff pastry.
- Brush the edges of the 2 layers of pastry with melted butter to seal.
- Bake at 350 degrees until puffed and golden brown.
- Allow to sit for 5 minutes before serving.
- (You may want to cut the brie en croute into 2 inch squares before serving)
