Brie En Croute With Apricot

  1. Pre-heat oven to 350 degrees. Toast the pecans in the oven. continue to keep the oven heated at 350 degrees once the pecans are removed.
  2. Place one sheet of puff pastry on an ungreased baking sheet.
  3. Place the 2 wedges of Brie on the puff pastry so that they resemble a rectangle. Cover with apricot preserves. Sprinkle the toasted pecans on top.
  4. Place the other sheet of puff pastry over the brie and first sheet of puff pastry.
  5. Brush the edges of the 2 layers of pastry with melted butter to seal.
  6. Bake at 350 degrees until puffed and golden brown.
  7. Allow to sit for 5 minutes before serving.
  8. (You may want to cut the brie en croute into 2 inch squares before serving)
