Fiery Fish Tacos
- Vegetables
- 1 Cup Corn
- 1/2 Red Onion diced
- 1 Red Pepper diced
- 1 Cup fresh cilantro, finely chopped
- 1 Lime Zested and juiced
- Fish
- 6 Tilapia Filets
- Other Goods
- Sour Cream
- 2 tablespoons Cayenne Pepper
- 1 tablespoon ground black pepper
- 2 tablespoons salt
- 2 tablespoons olive oil
- 1 Package Mexican Queso Fresco (white cheese)
- 12 Corn Tortillias Wamred
- 1. Preheat Grill or grill pan to high heat
- 2. In a medium bowl, mix together corn, red onion, red bell pepper and cilantro. Stir in lime juice and zest.
- 3. In a small bowl combine cayenne pepper, black pepper and salt. Brush tilapia filet with olive oil, sprinkle with spice rub.
- 4. Arrange filets on grill/grill pan and grill about 3 mins per side or until cooked through.
- 5. Top tortillas with fish, sour cream, crumbled queso fresco and corn salsa.
