Calico Pickles

  1. Combine vegetables in a large bowl.
  2. Dissolve salt in water and pour over vegetables.
  3. Soak for 15 to 18 hours in cool place. Drain.
  4. In a large kettle, mix sugar, spices and vinegar.
  5. Bring to a boil and boil for 3 to 4 minutes.
  6. Add vegetables and simmer 5 to 7 minutes.
  7. Pack hot into 8 hot pint jars, leaving 1/4-inch headspace.
  8. Remove air bubbles.
  9. Adjust caps; process 15 minutes in boiling water bath.
  10. Yield:
  11. 8 pints.
  12. Very good and pretty to give as gifts.
