Lazy Cook Tamales(An Original Recipe)
- 1 stewing chicken, stewed until tender
- 3 c. chicken broth
- 2 c. tomato puree or 1 can tomato paste or sauce
- 1 1/2 c. broth or juice
- 1 Tbsp. each: chili powder, chili pepper, Spanish seasoning, cumin and ground coriander
- 1 1/2 tsp. salt
- 3/4 c. flour
- 2 c. masa harina (tortilla flour)
- 2 c. hot broth with fat (reserved)
- 1 tsp. salt
- 1 can drained olives
- Stew the chicken until tender.
- Remove meat from bones; cut into bite size pieces and set aside.
- (You will need a quart and half of chicken broth.)
- Pour the fat with broth into a 2-cup measure and reserve (this should be about half or less fat). Simmer together for 20 minutes or more 2 cups chicken broth, the tomato puree, 1 1/2 cups broth or juice and the seasonings.
- After simmering period, mix together the flour with enough broth to make a smooth paste.
- Stir into sauce, stirring constantly, until sauce is smooth and slightly thick.
- Remove from heat.
