Curried Meatballs
- 1 c. soft bread crumbs (about 2 slices bread)
- 1 (28 oz.) jar None Such ready-to-use mincemeat
- 1 1/2 lb. lean ground beef
- 1 egg
- 2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. vegetable oil
- 1 c. chopped onion
- 1/2 c. chopped green pepper
- 2 tsp. curry powder
- 1/2 c. ReaLemon lemon juice from concentrate
- hot cooked rice
- In a medium bowl combine crumbs, 2/3 cup mincemeat, meat, egg, salt and pepper.
- Mix well.
- Shape into 1 1/2-inch meatballs.
- In a large skillet, brown meatballs in oil; remove as browned.
- In same skillet, cook onion and green pepper until tender.
- Add remaining mincemeat, curry and ReaLemon.
- Mix well.
- Return meatballs to skillet.
- Cover; simmer 30 minutes, stirring occasionally.
- Serve with rice.
