Low-Fat Pecan Oatmeal Cookies
- 1 c. sugar
- 2 c. brown sugar
- 1/4 c. Lite Bake (found in shortening section or 1/2 c. margarine)
- 4 egg whites
- 1 1/2 c. raisin water
- 1 c. unsweetened applesauce
- 4 tsp. vanilla
- 6 c. flour
- 2 c. oatmeal (5 minute kind)
- 4 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 2 c. raisins
- 2 c. chopped pecans
- Cream sugars and margarine. Add egg whites, mixing well. Add raisin water, applesauce and vanilla. Sift together flour, soda, salt, cinnamon and nutmeg. Add oatmeal to dry ingredients and fold all into creamed mixture. Blend well. Fold in raisins and nuts. Spoon dough onto cookie sheet sprayed with vegetable cooking spray. Bake at 375u0b0 for 9 to 10 minutes depending on individual ovens. These are very moist cookies.
