Spanish Treasure Casserole
- 1 c. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 3 Tbsp. shortening
- 1/2 lb. grated Cheddar cheese
- 1 1/2 c. milk
- 2 Tbsp. bacon drippings
- 6 c. sliced Spanish onions
- 1 c. diced cooked ham
- 1 egg
- 1 tsp. prepared mustard
- Sift flour and baking powder in bowl.
- Add shortening and 1/2 cup grated cheese.
- Cut in with pastry blender or two knives.
- Add 1/2 cup milk all at once.
- Stir just until moistened.
- Spread in 8 x 12-inch casserole dish.
- Melt bacon drippings in frying pan. Add sliced onions and cook over medium heat until limp and light brown.
- Stir in ham.
- Spoon onion-ham mixture over batter in casserole.
- Top with remaining cheese.
- Beat together egg, remaining milk and mustard.
- Pour over onion mixture.
- Bake 10 minutes at 450u0b0.
- Reduce heat to 350u0b0 and bake 20 minutes longer. Makes 6 to 8 servings.
