Spanish Treasure Casserole

  1. Sift flour and baking powder in bowl.
  2. Add shortening and 1/2 cup grated cheese.
  3. Cut in with pastry blender or two knives.
  4. Add 1/2 cup milk all at once.
  5. Stir just until moistened.
  6. Spread in 8 x 12-inch casserole dish.
  7. Melt bacon drippings in frying pan. Add sliced onions and cook over medium heat until limp and light brown.
  8. Stir in ham.
  9. Spoon onion-ham mixture over batter in casserole.
  10. Top with remaining cheese.
  11. Beat together egg, remaining milk and mustard.
  12. Pour over onion mixture.
  13. Bake 10 minutes at 450u0b0.
  14. Reduce heat to 350u0b0 and bake 20 minutes longer. Makes 6 to 8 servings.
