Tamale Pie
- 8 small or 6 large tamales (try XLNT brand in deli section)
- 1 1/4 lb. ground beef, browned and seasoned with salt, pepper, onion flakes, garlic powder and ground cumin
- 1 large can diced mild green chilies
- approximately 1 c. canned or frozen kernel corn
- 3 small cans sliced black olives
- 1 bunch green onions, chopped
- 1 c. shredded Cheddar cheese
- 3/4 c. tomato sauce or mild salsa
- Cut tamales into 1/2-inch slices and arrange in bottom of deep casserole (about 4-quart size).
- Layer with half the cooked ground beef.
- Sprinkle a layer of half the green chilies, half the corn, 1/2 the olives and 1/2 the onions.
- Repeat with tamale slices and so on.
- Top with shredded cheese and then an even covering of tomato sauce or salsa.
- Bake in a 350u0b0 oven, uncovered, for about an hour.
- Amounts of ingredients can be adjusted.
- Can be frozen and/or microwaved.
