American Chop Suey
- 2 T. olive oil
- 1 lb. lean ground beef
- 1/2 C thinly sliced onion
- 2 T. steak sauce
- 1/2 C sliced mushrooms
- 1/2 C sliced green pepper
- 2 (14-oz.) cans stewed tomatoes
- 1 to 2 T. paprika
- 1/2 tsp. pepper
- 1 C noodles (elbows, ziti or no-yolks)
- In a large skillet, over medium heat, cook the onion and green pepper in the olive oil.
- Brown lightly.
- Add the ground beef and cook slowly, breaking up with a fork.
- Meanwhile, cook noodles as directed on the package and drain.
- Add the steak sauce, mushrooms, stewed tomatoes, paprika and pepper to the beef mixture.
- Simmer for 20 minutes.
- Add the noodles to the beef mixture and stir.
- Serve with warm Italian bread or rolls.
