Gougere

  1. Preheat oven to 425u0b0.
  2. Lightly grease cookie sheet.
  3. Place water, butter, salt and pepper in a saucepan.
  4. Heat until butter is melted and mix is boiling rapidly.
  5. Add flour to butter; mix all at once.
  6. Continue cooking.
  7. Stir until mix forms a ball and leaves sides of pan clean.
  8. Remove from heat.
  9. Beat in eggs, one at a time.
  10. Mix well between each egg.
  11. Stir in all but 1 tablespoon gougere.
  12. Place rounded tablespoons of dough on sheet in ring shape about 8 to 9-inches round.
  13. Leave about 2 1/2 inches space in the middle.
  14. Sprinkle dough with rest of cheese.
  15. Bake 40 to 45 minutes or until brown.
