Chicken Green Rice
- 2 kg fresh chicken pieces
- 2 cups rice (soaked overnight with cold water)
- 3 tablespoons garum masala
- 1 tablespoon ginger and garlic
- 1 large onion sliced
- 2 cinnamon sticks, 3 bay leaves
- salt to taste
- potatoes ( fry for few minutes)
- mint mixture
- 2 bunches of mint
- 2 bunches of dhania
- chillies (quantity , depends on how pungent you want to make )
- liquidise the above mint mixture together.
- 1. Heat oil in pot , add onions,cinnamon sticks, bayleaves , curry leaves & fry until onions is slightly brown.
- 2. Add ginger & garlic, chicken pieces & salt, simmer for approx. 10 minutes..
- 3. Add mint mixture and cover pot.
- 4. Add garum masala after 40 minutes of cooking .
- 5. Add water if required and let chicken cook until 3 quarter done.
- 6. Add fried potatoes and some butter ( 3 tablespoons) & cook for further 10 minutes .
- 7. Add soaked rice and cook for 5 minutes on stove .
- 8. Leave in the oven at 220 deg. Until rice is cooked.
