Groundnut Stew
- 3 Tbsp. oil
- 2 lb. beef cubes (1-inch or smaller), rolled in flour
- 1/2 tsp. nutmeg
- 1 Tbsp. chili powder
- 4 medium onions
- 1 clove garlic, minced
- 3/4 c. tomato paste
- 6 c. water
- red pepper
- 1/2 c. chunky peanut butter
- 2 Tbsp. oil
- In large skillet, heat the 3 tablespoons of oil.
- Add the beef.
- While browning, add the nutmeg and chili powder.
- When meat is browned, add the onions, garlic, tomato paste, water and pepper.
- Simmer until meat is tender.
- A half hour before serving, heat the peanut butter and remaining oil in small saucepan.
- Stir over medium heat for 5 minutes.
- Add peanut butter mixture slowly to beef stew; simmer 20 minutes.
- Serve over rice.
